Can we pause a moment and notice, summer is almost over already 😲 how did this even happen?!
We have been busy getting things squared away to close on our house and land finally! Also doing lots of fishing and swimming when possible, this momma doesn’t deal well with heat!
So talking sales this week, there’s not a lot going on but this is a week to scour your local adds, across the country I’m seeing a large variety of odds and ends being great prices but they dont flow across most stores at all, it’s rather odd actually!
Especially check out the local, cheap stores like sav-a-lot, aldi, food4less, Priceless etc. Some things I noticed in those types of stores were banquet pot pies $.59, chicken drumsticks $.39, rice a roni and similar boxed rice meals ranging from $.40-80 ea. Various fruits etc.
Boneless chicken is lower prices this week many places but not at a rock bottom point anywhere that I saw but worth getting a little extra if you are out 🙂
Now the good stuff 😁
If you don’t have a booming garden or didnt plant any of these, this is a good time to stock up on some great produce items!
Summer squash
Zucchini
Eggplant
Watermelon
Beyond eating mad amounts of watermelon while its fresh you can also preserve the bounty while its inexpensive to enjoy through the rest of the year!
Try cubing up the watermelon and freeze(I suggest laying on a cookie sheet to freeze even and fast then toss into freezer bags) these can be a yummy frozen treat as is, add to a smoothie, drop a few cubes into a bottle of water for flavored water, add to a juicing mix, add a few to a winter salad to bring a little summer refreshment to it!
You can also dehydrate watermelon, it’s pretty much like candy! Great way to treat yourself or the kids without a load of sugar!
Eggs
Are also at a great stock up price most places right now running from $.50 – .88 most places. Honestly there is NO reason to be paying more than $1 a dozen for eggs this summer!
So if you don’t have your own chickens or they aren’t producing as good yet/any more as you would like, go stock up!
There are a number of ways you can preserve eggs for the coming year. Here are a few options to get you going but do some research and you’ll find more!
Freeze them!
You can crack into a muffin pan and freeze then put in a freezer bag or mix up the eggs then put them into ice cube trays then move to freezer bags, just be sure to note 1 cube = how much, usually I get right about 1/2 egg per cube.

You can also pre cook, fried or scrambled and freeze for easy breakfast sandwich making!
Pickle
My favorite! In general you can use your favorite pickling recipe just fill the jar with eggs instead of cucumbers! 🙂 I LOVE dill with a bit of garlic to it so I use the recipe in this post 🙂
Dehydrate
Say what?!
Yes you can dehydrate eggs and its surprisingly simple! There’s plenty if description to this so I’m making it a seperate post here! (Posting shortly)
Once dehydrated you can make it a powder for using for scrambled eggs, omelets, in baking and probably more!
Bake with them
Yup, make some egg heavy recipes for later enjoyment and freeze them! Here are a few to get you started:
Pound cake
Lemon curd
Omelet Muffins
